Balletic unveils Nova protein system to power performance nutrition

Food-tech company, Balletic, has launched Balletic Nova, a new line of precision-engineered protein blends developed for high-performance nutrition across food and beverage categories. Designed for versatility and formulated to support muscle growth and recovery, the line is expected to begin shipping across the USA in early May.

The Balletic Nova range includes three application-specific blends: Balletic Meat, Balletic Smooth, and Balletic Bake. Each formulation has been tailored for use in meals, snacks, and beverages, offering a complete amino acid profile with a clinically backed dose of 2.5g of leucine per serving – a critical threshold for activating muscle protein synthesis.

“We didn’t build this to fit into a category. We built it to outperform everything on the shelf,” said Anita Broellochs, Co-Founder & CEO of Balletic. “This is protein designed for the human body – complete, functional, and ready to go wherever food goes.”

Unlike most plant-based proteins, which often lack sufficient leucine and require complementary ingredients to reach complete amino acid status, Balletic Nova aims to deliver a full nutritional profile in one system. Each serving provides more than 28g of protein, free from dairy and cholesterol, and developed without the common sensory tradeoffs that often limit plant-based applications.

To highlight how the formulations perform in real food environments, Balletic is showcasing sample applications for each blend. Balletic Meat is featured in a crispy Gyukatsu-style dish to demonstrate savory use and authentic bite; Balletic Smooth is blended into a berry smoothie for clean flavor and mixability; and Balletic Bake is incorporated into protein pancakes to show its potential in baked goods.

Balletic Nova is aimed primarily at food manufacturers and food-service companies, offering a platform for product developers looking to combine functionality with flavor. For a limited time, the company is also offering direct-to-consumer access via its website.

The launch reflects Balletic’s broader ambitions to push the boundaries of plant-based protein. Based in Davis, California, the company has focused on rethinking protein design from the molecular level, building systems that prioritize nutritional performance while maintaining culinary flexibility.

In addition to the high leucine content, each blend in the Nova line includes a balance of branched-chain amino acids (BCAAs) and essential amino acids intended to support recovery, energy metabolism, and satiety. The company notes that all formulations are optimized for mixability, heat stability, and clean-label potential.

The line officially became available to food industry partners on 24 April 2025, and orders are expected to begin shipping in the first half of May. With increasing demand for functional ingredients that align with active lifestyles, Balletic Nova is positioned to meet formulation needs across a range of consumer products – from protein-rich snacks to recovery-focused drinks and meal components.
