Galactic launches oregano-based ingredient to enhance flavor and freshness in plant-based foods
Galactic has introduced a new natural oregano flavoring ingredient designed to improve both the taste and shelf-life of meat and plant-based protein products. Unveiled at IFFA 2025 in Frankfurt, Galimax Flavor O-50 is the latest addition to the company’s Galimax range and is being promoted as a clean-label solution that helps manufacturers meet consumer demand for natural ingredients while reducing food waste.
Galactic, based in Belgium, specializes in lactic acid, its derivatives, and antimicrobial solutions. The company’s newest offering builds on the earlier success of Galimax Flavor F-50, a basil-based flavoring ingredient, and responds to two major market shifts: a move away from artificial additives and a growing consumer focus on food waste.
“Fermentation experience amassed over many years has enabled us to develop these infused flavors, which are a unique proposition for the industry,” commented Maria Montalva, NPD Process & Product Manager at Galactic. “We know that Galimax Flavor O-50 is exactly the type of ingredient manufacturers are looking for. It offers dual functionality, elevating the taste and aroma of savory products whilst keeping them fresher for longer – thereby supporting manufacturers in their quest to keep their ingredient labels clean and short and to reduce food waste.”
Galimax Flavor O-50 is made through a process that infuses real oregano leaves in a vinegar solution, drawing on traditional infusion and fermentation techniques alongside Galactic’s proprietary technology. The result is a flavoring ingredient that contains both the aromatic and preservation properties of oregano, delivered in a natural format that meets modern labeling expectations.
The product’s sensory profile is characterized by a rich and savory herbal aroma, supported by broth-like, umami, and warm spice notes, as well as subtle nutty undertones and a touch of vinegar acidity. This makes it suitable for a wide range of applications, including meat, poultry, sauces, dressings, and prepared dishes like lasagna and pasta salad. Trials in Galactic’s application lab have confirmed its performance across these categories, with further development underway.
According to data cited by the company, herbal flavors were the fastest-growing botanical category in global food and beverage launches between 2019 and 2024. Galactic sees Galimax Flavor O-50 as well-positioned to meet this demand, offering a solution that is not only appealing from a flavor perspective but also contributes to extended shelf life, which helps curb food spoilage.
Innova’s 2024 consumer surveys indicate that shoppers are increasingly attentive to the environmental impact of food waste, with 50% reporting that they actively try to reduce it. At the same time, many are seeking more natural ingredients as part of a healthy diet. Galactic positions Galimax Flavor O-50 as an answer to both trends, combining functional preservation with recognizable, plant-based flavoring.
Galactic is currently showcasing Galimax Flavor O-50 with live cooking demonstrations at its IFFA 2025 stand (Hall 11, Booth B98), offering manufacturers and formulators a first-hand look at how the ingredient performs in culinary applications.
